二 | 　　中国营养学会理事长杨月欣在圆桌讨论中表示，我国居民整体蛋白质摄入总量充足，维持在合理的能量占比区间，但存在动植物蛋白配比失衡、摄入结构不科学的突出问题。　　“城市人口普遍肉类摄入偏多，动物蛋白占比过高，需要适度减量，增加豆类等优质植物蛋白摄入；而农村居民恰恰相反，多依赖植物蛋白，亟需补足优质动物蛋白，实现动植物蛋白均衡搭配。”杨月欣强调，蛋白质营养的核心是质量适配，不同区域、不同人群的膳食优化不能一概而论，精准调整蛋白结构、提升蛋白摄入质量，才是改善国民蛋白营养现状的关键。　　在科研创新层面，杨月欣指出当前蛋白营养研究存在维度单一、深度不足的短板，明确了未来科研攻坚方向。她表示，过往研究多聚焦总蛋白含量、基础氨基酸组成，忽视了不同来源蛋白的差异化功能，以及蛋白质与脂肪、小分子物质的结合效应，精细化、深层次研究较为匮乏。　　“无论是动物蛋白、植物蛋白还是乳源蛋白，不同品类的小分子结构、功能特性、互补机制都值得深挖。”杨月欣说道，行业需深耕蛋白质结构与功能的关联性研究，依托蛋白互补理论、结构功能理论，探索不同蛋白的协同利用、适配补充机制，让基础科研成果更好赋能人体营养吸收与健康养护。　　针对全生命周期营养研究短板，杨月欣重点聚焦老年营养领域，提出针对性发展建议。她表示，长期以来，国内营养学研究重点聚焦婴幼儿生长发育，对婴幼儿必需氨基酸、特殊营养需求的研究体系完善、成果丰富，但针对老年人群的营养研究长期滞后，相关方法学、机制研究、应用落地存在明显空白。　　“随着人口老龄化加剧，如何通过精准蛋白营养助力老年人健康长寿、减少慢病发生，是当下营养领域最迫切的研究课题。
